1. Ultimate Decorated Cake

What’s better than a cake decorated by Rick’s Cakehouse? One that’s not!

  2. Tonya and Matt’s Wedgagement Cake

Never heard of a wedgagement? It  goes like this: Tonya and Matt invited everyone to their engagement party. Only about half an hour in, Matt gets up the front and announces it’s actually their wedding. SURPRISE!

It’s our chocolate cake with the Ultimate Chocolate Filling

  3. Miss Piggy, the night she met Kermit

This is Miss Piggy in her prime. Tonight she’s appearing at a high-class lounge bar on downtown Manhattan. Little does she know that in the audience tonight will be a green banjo-playing frog who will take her to the height of her career and steal her heart for good.

The cake is a caramel buttercake for Michelle — who collects pigs. Maybe Miss Piggy will never be eaten?

It should be noted that in “Being Elmo” Kevin Clash describes Miss Piggy as “a truck driver who wants to be a woman”. But I think before she ended up disillusioned with show-business she was a classing young .. pig.

  4. We are Geelong – The greatest team of all

A great fun cake to make for a footy crazy 70 year old. The theme was to be a “footy cake”, and I threw around half a dozen concepts before I got close to this. Then I just let this happen. This came out really well.

Need I say it? It’s chocolate cake with my Ultimate Chocolate Filling.

    Happy birthday Rose!

  5. The ultimate chocolate filling

Want to make your own Cakehouse Ultimate Chocolate Filling? It’s not only delicious, but it’s amazingly easy!

    Ingredients

    • 125g Unsalted Butter
    • 1/2 Cup Cocoa Powder
    • 1/2 Cup Chocolate Topping (I use Hershey’s when I can get it, but Cottees works equally well)
    • 4 Cups Soft Icing Mixture (if this isn’t available in your part of the world, it’s basically confectioners sugar which would work just as well)
    • 1/4 Cup of Milk
    • 1/4 Cup of Milo powder

    To make

    1. Get the butter to room temperature. It needs to be soft. I chop it into 2cm cubes an put them in an airtight container on the bench overnight
    2. Put the butter, cocoa, topping, milk and sugar in a mixing bowl
    3. Mix on low speed until everything is moist.
    4. Turn up the mixer to medium and beat until it’s nice and smooth (you don’t want to pump too much air into it, so just get it smooth)
    5. Add Milo and mix until evenly combined (we do the Milo at the end in an effort to retain some of the crunch)

    Notes

This is not a buttercream that will set up stiff. It’s a soft filling. When using this, I pipe stiff buttercream around the edge of the cake then fill it in with the chocolate. The buttercream holds the top cake up and holds the chocolate filling in.
